Preheat Belgian waffle maker.
Beat the eggs in a large bowl with a mixer until fluffy. Beat in flour, milk, SD Blood Orange Olive Oil, maple
syrup, baking powder, salt and vanilla-until smooth.
Grease the preheated waffle maker with olive oil spray.
Pour the mix into the preheated waffle maker.
Cook until golden brown.
In a small saucepan combine cherries, balsamic vinegar,
honey, and vanilla extract.
Bring to a boil over medium-high heat, and stir well.
Reduce heat to low; simmer for 10 minutes or until
thickened and reduced. Remove from burner.
Serve warm over the blood orange waffles and enjoy!
